Blueberry, lemon and banana loaf

“This great tasting loaf proves that you can have your cake and eat it. Using bananas helps to add moisture and sweetness, thus less added sugars and fats are needed.”

Method

Pre-heat the oven to 170C fan/ 340F.

Line a 20cm loaf tin with baking paper.

In a large bowl mix the self raising flour, baking powder, and bicarbonate of soda.

In a separate bowl whisk the eggs together, then add the yoghurt and mix.

Next add the mashed banana, lemon juice, zest and honey to the wet ingredients and mix thoroughly.

Pour the wet ingredients into the flour mix and combine.

Finally gently fold in the blueberries.

Pour the mix into the loaf tin and bake for 45 minutes.

Check after 30 minutes by sticking a cocktail stick or knife into the centre. If it comes out clean it is ready.

Let it cool for a few minutes then turn onto a wire rack to finish cooling.
